Step-by-Step Instructions

Step 1: Prepare the Paneer Tikka

  1. In a mixing bowl, combine yogurt, ginger garlic paste, red chili powder, turmeric, garam masala, lemon juice, salt, and besan. Mix well to form a smooth marinade.
  2. Add the paneer cubes and coat them well with the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for best flavor).
  3. Heat 1 tbsp oil on a non-stick pan or grill pan. Place marinated paneer pieces and cook on medium heat until golden brown and slightly charred on both sides.Alternative: Bake at 200°C (390°F) for 15 minutes or grill using skewers in an oven/toaster grill

Step 2: Make the Masala Gravy

  1. Heat oil or butter in a pan. Add cumin seeds and let them sizzle.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add ginger garlic paste and sauté until raw smell disappears.
  4. Add chopped tomatoes and soaked cashews. Cook until tomatoes are soft and oil starts separating.
  5. Cool the mixture slightly and blend it into a smooth paste using a little water.
  6. In the same pan, add a little oil and pour the blended masala. Cook for 5-7 minutes.
  7. Add red chili powder, turmeric, coriander-cumin powder, and salt. Mix well.
  8. Add water to adjust the consistency of the gravy. Simmer for 2–3 minutes.
  9. Now add crushed kasuri methi and fresh cream. Stir gently.
  10. Finally, add the grilled paneer tikka cubes. Simmer for another 5 minutes so the flavors combine.

Serving Suggestions

Serve Paneer Tikka Masala hot with:

  • Butter naan or garlic naan
  • Tandoori roti
  • Jeera rice or plain basmati rice
  • A side of sliced onions and lemon wedges

Garnish with fresh coriander leaves and a swirl of cream for a rich, restaurant-style finish.

Tips & Tricks

  • Use thick curd: Always use hung curd or thick curd for marination to avoid watery coating.
  • Add smokiness: For restaurant-style smoky flavor, place a piece of hot charcoal in a bowl inside the curry, drizzle with ghee, cover with a lid for 2–3 minutes.
  • Cashew substitute: If you don’t have cashews, use almonds or skip altogether and add more cream for richness.
  • Spice adjustment: Increase or reduce red chili powder as per your taste preference.
  • Don’t overcook paneer: Paneer can get rubbery if overcooked – just grill until lightly golden.
